St. Francis de Sales, The Catholic Controversy (1594-98); (free online version)
Probably the single best Catholic apologetics book against protestantism ever written. Written toward the end of the 16th century, St. Francis de Sales convinced tens of thousands of Calvinists to come back Home to the Catholic Church through this work.

Dr. Scott and Kimberly Hahn (converts), Rome Sweet Home: Our Journey to Catholicism (1993)
Dr. Scott and Kimberly Hahn are converts from protestantism. Scott was a presbyterian pastor who was drawn to the Catholic Church by a combination of deep scriptural scholarship, and reading the Church Fathers. Kimberly would follow him five years later, primarily because of her study of the issue of contraception, and realizing that only the Catholic Church had maintained the traditional Christian teaching on the subject.

St. John Henry Cardinal Newman (convert), An Essay on the History of the Development of Christian Doctrine (1878)
St. John Henry Cardinal Newman was a 19th century convert from Anglicanism. His essay on the development of dogma conclusively shows that the Church’s understanding of the deposit of the Faith grows and is refined through time, and that this is not incompatible with the Faith being “once for all delivered to the saints.” He notes the signs of legitimate and illegitimate developments, and how the Church has ensured that only genuine developments become binding on the Christian faithful.

Erick Ybarra, The Papacy: Revisiting the Debate Between Catholics and Orthodox (2022)
This is perhaps the most comprehensive single-volume apologetic on the papacy ever written. Ybarra provides abundant documentation from individual Church Fathers and multiple ecumenical and local councils of the ancient Church. He also engages with the best in protestant and Eastern Orthodox scholarship.
